10. Baking - Lemon, Honey and Oat

The recipe we used was based off a Edmonds Anzac biscuit recipe. We substituted some ingredients for the 'healthier options.'

Ingredients:
  • 1/2 cup of standard flour          - Used quinoa instead
  • 1/3 cup of sugar                       - Used honey instead
  • 2/3 cup of coconut
  • 3/4 cup of rolled oats
  • 50g of butter                             - Used almond butter instead
  • 1 tbsp of golden syrup              - Used maple syrup instead
  • 2 tbsp of boiling water
  • 1/2 tsp of baking soda
Also added
  • Juice from 2 lemons
  • 1/4 tsp of lemon rind
  • 1 tsp of lemon pulp

Method:

Mix together quinoa, coconut and rolled oats
Melt almond butter, honey and maple syrup together
Dissolve baking soda in the boiling water, add to the butter and syrup
Stir butter mixture into the dry ingredients
Add lemon mixture
Place level tablespoons of the mixture onto a greased baking tray
Bake for about 15 minutes or until golden

The recipe said it makes 20 but made only 9! Maybe we made the portions too big on the tray

Outcome:

Our opinion: Tasted very nice and natural, can defiantly pick up the lemon and coconut but not so much the honey. They are soft but the ingredients like the coconut make it a bit crunchy which is what we wanted.

We gave the biscuits to people to try and we recorded all the things they picked up:

The people that enjoyed them said they would buy it if it was on the market as they like that sort of biscuit

Conclusion on flavour
  • Most people picked up on the lemon or the tanginess of the lemon which was a good sign. The honey was harder to taste because it really just replaces the sugar. We will keep the honey to replace actual sugar but maybe not include it in the name.
  • More people picked up on the coconut so will include that in the name instead.
  • Other than that the overall result was pretty good.
  • After a few refinements, this flavour is a winner!
